(SUNfoto by Ardee Napolitano) Center Market employee Erik Anchondo, 19, turns up the flame in a roaster to burn the peels off of green chile in front of the store Aug. 28. Center Market gets its chile from Hatch, one of the most popular sources of the vegetable in the state. A Mexico native, Anchondo just learned how to roast chile three weeks ago. When asked what his favorite part of the job was, he said, “The smell — you never get tired of the smell.”
