(SUNfoto by Andrew Kasper) John Bernasconi, who owns the only micro-distillery in Rio Arriba County and one of three in the state, demonstrates how a grist hydrator is used in his operation. The hydrator prepares the grain for brewing beer, which is later distilled into one of the various types of liquors made at the site. Bernasconi makes everything from gin to vodka and a much-anticipated whiskey, dubbed Taos Lightning, which he hopes to soon begin selling to area restaurants and bars.
